Vegan Peanut Butter Cookies
Ingredients
- 1/4 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking soda
- Pinch salt
- 1 flax egg
- 1 cup peanut butter
- 1/2 cup maple syrup
Frosting
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 3 tbsp unsweetened dairy-free yogurt
- 1 tbsp nut milk
Preparation
Preheat the oven to 350 degrees Fahrenheit.
Mix all the dry ingredients for the cookies until well-combined.
Do the same with the wet ingredients.
Then add the dry to the wet and mix until a dough forms.
Place on a parchment-lined cookie sheet and bake for about 10 minutes.
While the cookies are baking, mix together all frosting ingredients until combined completely.
Wait for the cookies to cool completely before adding frosting if desired.
