Vegan Chocolate Chip Cookies

Ingredients

  • 1/3 cup coconut oil melted
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla
  • 1 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 2 tbsp raw coconut sugar
  • Pinch of cinnamon
  • 1/3 cup dark chocolate chips

Preparation

  1. Preheat oven to 350 degrees.

  2. Mix maple syrup, melted coconut oil, and vanilla.

  3. In a separate bowl sift together almond flour, tapioca flour, baking soda, salt, coconut sugar, and cinnamon.

  4. Gently add dry mixture to wet ingredients.

  5. Mix together and fold in dark chocolate chips.

  6. Let batter sit in fridge for 20 minutes.

  7. Scoop and press each scoop flat.

  8. Bake for 12-14 minutes and enjoy.
