Cassava Coconut Crumble Cookies
Ingredients
- 1/2 cup coconut sugar
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup cassava flour
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Vegan chocolate chips
Preparation
Preheat the oven to 350°F
Mix the top and bottom ingredients listed in separate bowls, excluding the chocolate chips.
Add the flour mixture from the small bowl to the medium bowl to create the batter, then mix in the chocolate chips.
Place small cookie scoop-sized balls of dough on parchment paper, flatten the dough, and press in extra mini chocolate chips.
Bake for 10 minutes at 350°F, cool for 10 minutes before transferring to a cooling rack, and wait an additional 10 minutes before enjoying.
