Vegan Gluten-Free Chocolate Chip Cookies

Ingredients

  • 2 flax eggs (2 Tbsp ground flaxseed with 6 Tbsp warm water soaked for 5min)
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 3/4 cup coconut sugar
  • 1 cup coconut oil
  • 1 tsp vanilla extract
  • 1 cup vegan chocolate chips

Preparation

  1. Prepare flax eggs by mixing 2 tablespoons ground flaxseed with 6 tablespoons warm water and let sit for 5 minutes

  2. Mix all dry ingredients first.

  3. Then add the wet ingredients.

  4. Finally, mix the dough with the chocolate chips.

  5. Shape into around 12 cookies and sprinkle some sea salt on top of each.

  6. Place them on a baking sheet lined with parchment paper lightly greased with coconut oil.

  7. Bake at 350°F for around 15-17 minutes.

  8. Let cool and enjoy.
