Vegan Skillet Cookie with Walnuts and Chocolate

Ingredients

  • 1 1/2 cups almond flour
  • 2 flax eggs
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1/4 cup coconut oil (room temp)
  • 1/4 cup coconut sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chunks

Preparation

  1. Preheat oven to 350 and grease a skillet. Mine is 8 inches.

  2. Make flax eggs, beat coconut oil and sugar together.

  3. Add in vanilla and flax eggs.

  4. In a separate bowl whisk dry ingredients together.

  5. Add dry to wet and stir to combine.

  6. Fold in walnuts and chocolate.

  7. Bake for 20 minutes and top it with whatever you want.
