Allergy Friendly Vegan Sun Butter Muffins

Ingredients

  • 2 flax eggs (2 tbsp ground flaxseed meal + 6 tbsp water)
  • 1 cup mashed banana (2 bananas)
  • 1/2 cup Sunbutter butter
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup almond milk
  • 1 3/4 cups oat flour
  • 1/3 cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp sea salt

Preparation

  1. Make your flax egg and set for 5-10 minutes

  2. Mash your bananas in a medium-sized bowl, then add the remaining wet ingredients (don’t forget the flax egg!)

  3. Mix the dry ingredients in a small bowl

  4. Add the dry into the wet bowl to create your batter

  5. Add to your muffin tin, top with vegan chocolate chips, and bake for 20 minutes at 350°F
