Allergy Friendly Vegan Sun Butter Muffins
Ingredients
- 2 flax eggs (2 tbsp ground flaxseed meal + 6 tbsp water)
- 1 cup mashed banana (2 bananas)
- 1/2 cup Sunbutter butter
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/2 cup almond milk
- 1 3/4 cups oat flour
- 1/3 cup coconut sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/8 tsp sea salt
Preparation
Make your flax egg and set for 5-10 minutes
Mash your bananas in a medium-sized bowl, then add the remaining wet ingredients (don’t forget the flax egg!)
Mix the dry ingredients in a small bowl
Add the dry into the wet bowl to create your batter
Add to your muffin tin, top with vegan chocolate chips, and bake for 20 minutes at 350°F
