Vegan Sweet Potato Vanilla Muffins

Ingredients

  • 1 large sweet potato (peeled and cooked)
  • 1/2 cup oat milk
  • 2 tablespoons peanut butter
  • 2 cups oat flour
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup or honey
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon sea salt

Optional additions

  • 1/2 cup chocolate chips
  • 1/2 cup chopped almonds

Preparation

  1. Preheat the oven to 200 degrees Celsius or 400 Fahrenheit.

  2. Cook sweet potato cubes, peeled, for about 10 minutes or until soft.

  3. Mash the potato in a large bowl with a fork or mixer.

  4. Add peanut butter, vanilla extract, maple syrup, coconut oil, and oat milk, then mix until all combined.

  5. Place dry ingredients in another mixing bowl and combine.

  6. Slowly add dry ingredients to the wet mixture and stir until all mixed.

  7. Optionally, add chocolate chips or almonds into the mixture.

  8. Scoop the mixture into muffin tins up to three-quarters full and bake for about 20-25 minutes.

  9. Let them cool for about 15 minutes.

  10. Ready to serve.
