Pumpkin Spice Cookie Dough Stuffed Vegan Muffins

Ingredients

  • 1/2 cup canned pumpkin puree
  • 1/2 cup unsweetened almond milk
  • 3 tablespoons coconut oil (melted)
  • 2.5 teaspoons vanilla extract
  • 1 cup oat flour
  • 1/2 cup coconut sugar
  • 2 tablespoons ground flaxseeds
  • 2.5 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Vegan chocolate chips
  • Vegan cookie dough (e.g., @hiitnutrition brand)

Preparation

  1. Mix the wet ingredients in a large bowl and let it sit for 10 minutes

  2. Combine the dry ingredients in a medium bowl

  3. Stir the dry ingredients into the wet ingredients to create your batter

  4. Place one spoonful of batter in a muffin tray to cover the bottom layer

  5. Take approximately 1 teaspoon of vegan cookie dough, flatten it into a coin shape and place it on the batter

  6. Add the remaining batter on top of the cookie dough layer then add vegan chocolate chips

  7. Bake for 18-20 minutes at 350°F, then cool and enjoy
