Vegan Banana Bread Pumpkin Muffins
Ingredients
- 1 spotty ripe banana
- 1/4 cup pumpkin puree (canned)
- 2 tsp vanilla extract
- 3 tbsp coconut oil (melted)
- 1/2 cup Bob's Red Mill oat flour
- 1/2 cup Bob's Red Mill buckwheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup coconut sugar
- 1/4 cup Enjoy Life Foods mini vegan chocolate chips
Preparation
Mash the bananas, then mix together the wet ingredients first (the top 4)
Mix the dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl
Spray a muffin tin and add the mixture plus the chocolate chips on top
Bake for 18 minutes at 350 degrees
