Vegan Banana Bread Pumpkin Muffins

Ingredients

  • 1 spotty ripe banana
  • 1/4 cup pumpkin puree (canned)
  • 2 tsp vanilla extract
  • 3 tbsp coconut oil (melted)
  • 1/2 cup Bob's Red Mill oat flour
  • 1/2 cup Bob's Red Mill buckwheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut sugar
  • 1/4 cup Enjoy Life Foods mini vegan chocolate chips

Preparation

  1. Mash the bananas, then mix together the wet ingredients first (the top 4)

  2. Mix the dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl

  3. Spray a muffin tin and add the mixture plus the chocolate chips on top

  4. Bake for 18 minutes at 350 degrees
