Vegan Chocolate Chip Banana Bread Muffins
Ingredients
- 2 ripe bananas
- 2 tablespoons almond milk (any plant milk works)
- 2 teaspoons vanilla extract
- 2 teaspoons apple cider vinegar
- 3 tablespoons coconut oil (melted)
- 1 cup spelt flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/3 cup coconut sugar
- 1/2 cup vegan chocolate chips
Preparation
Preheat the oven to 350 degrees Fahrenheit
Mash the bananas, then mix together the wet ingredients first.
Mix dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl.
Stir in two-thirds of the chocolate chips with the batter, and save the other half to add on top.
Spray a muffin tin and add the mix.
Bake at 350 degrees Fahrenheit for 18-20 minutes.
