Vegan Chocolate Chip Banana Bread Muffins

Ingredients

  • 2 ripe bananas
  • 2 tablespoons almond milk (any plant milk works)
  • 2 teaspoons vanilla extract
  • 2 teaspoons apple cider vinegar
  • 3 tablespoons coconut oil (melted)
  • 1 cup spelt flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/3 cup coconut sugar
  • 1/2 cup vegan chocolate chips

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit

  2. Mash the bananas, then mix together the wet ingredients first.

  3. Mix dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl.

  4. Stir in two-thirds of the chocolate chips with the batter, and save the other half to add on top.

  5. Spray a muffin tin and add the mix.

  6. Bake at 350 degrees Fahrenheit for 18-20 minutes.
