Simple Vegan Banana Bread Loaf

Ingredients

  • 2 cups spelt flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 150g vanilla bean cashew yogurt
  • 1/3 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3-5 tablespoons vegan dark chocolate chips

Preparation

  1. Mash the bananas in a medium size bowl, then add the rest of the wet ingredients and stir together

  2. In a separate bowl, mix the dry ingredients

  3. Combine the wet and dry mixtures to form the batter

  4. Add a few handfuls of vegan chocolate chips into the batter before transferring to a loaf tin

  5. Line the loaf tin with parchment paper or coat with oil, and add the banana bread mixture

  6. Top with mini dark chocolate chips and vegan paleo granola bits for texture and crunch, then bake for 38-42 minutes at 350°F. Cool before cutting and enjoy!
