Lemony Banana Bread

Ingredients

  • 250g gluten free self raising flour ? 250g apple purée
  • 100g maple syrup ?3 large over ripe bananas mashed ?60ml any non-dairy milk
  • 1 tbsp apple cider vinegar ?1 tsp vanilla extract
  • 1 tsp baking powder
  • Juice and rind of three lemons
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preparation

  1. Makes 1 loaf

  2. Mix milk and cider vinegar and leave to curdle

  3. Put all other ingredients in a large bowl and mix until smooth

  4. Add milk mixture to the bowl and stir

  5. Line a loaf tin with baking paper and pour in mixture ?Oven bake on 180 degrees for 30 minutes or until golden and a skewer prod comes out clean
