Lemony Banana Bread
Ingredients
- 250g gluten free self raising flour ? 250g apple purée
- 100g maple syrup ?3 large over ripe bananas mashed ?60ml any non-dairy milk
- 1 tbsp apple cider vinegar ?1 tsp vanilla extract
- 1 tsp baking powder
- Juice and rind of three lemons
- 1/2 tsp baking soda
- 1/2 tsp salt
Preparation
Makes 1 loaf
Mix milk and cider vinegar and leave to curdle
Put all other ingredients in a large bowl and mix until smooth
Add milk mixture to the bowl and stir
Line a loaf tin with baking paper and pour in mixture ?Oven bake on 180 degrees for 30 minutes or until golden and a skewer prod comes out clean
