Vegan Pumpkin Bread

Ingredients

  • 1 can (15 ounce) or 1 cup pumpkin puree
  • 1/4 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup date sugar
  • 1 flax egg (1 tablespoon ground flaxseed with 3 tablespoons water, whisk together, set for 10 mins)
  • 1 teaspoon vanilla extract
  • 2 1/2 cups oat flour (blend oats in a high speed blender until completely flour like)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tblsp. cinnamon
  • 1/3 teaspoon ground cloves
  • 1/3 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Preparation

  1. Preheat the oven to 180 C°

  2. Line loaf pan with parchment paper or greased foil

  3. Next, add the wet ingredients to a large bowl: pumpkin, coconut oil, maple syrup, sugar, flax egg, and vanilla and whisk them all together

  4. Add the dry ingredients like oat flour, baking soda, baking powder, cinnamon, cloves, nutmeg and salt

  5. You will have a quiet thick consistency

  6. Put the batter into the prepared loaf pan

  7. Bake for around 50-60 minutes or until toothpick comes out dry
