Banana Chocolate Muffins

Ingredients

  • 2 medium ripe bananas
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 2 tsp baking soda
  • 1/4 cup brown sugar .
  • 3 tbsp maple syrup
  • 1/4 cup drippy nut butter (i used half tahini, half almond butter for sweetness)
  • 2 tbsp melted coconut oil .
  • 1/2 cup cocoa powder (sifted)
  • vanilla extract, pinch of salt
  • 2 cups oat flour (2 cups rolled/quick oats pulsed in a blender to a flour)
  • chocolate chips (i chopped half a dark chocolate bar)

Preparation

  1. Preheat oven to 350°f & grease a standard 12-cup muffin tin

  2. In a large mixing bowl, make the flax egg

  3. Once set (5 mins), add the bananas & mash together until smooth

  4. Add baking soda, sugar, maple syrup, tahini, salt, oil & whisk together

  5. Then add cocoa powder & mix again

  6. Add the oat flour little by little & stir together

  7. The batter will be very thick, but still scoopable & moist

  8. Fold in the chocolate

  9. Fill 11 muffin tins with the batter almost to the top

  10. Bake for 25-30 mins until risen & a toothpick comes out clean

  11. Attempt to not eat them all in one night ?
