Spiced Walnut Vegan Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 1.5 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/3 cup non-dairy milk
  • 1/3 cup vegan margarine
  • 3/4 cup brown sugar, packed
  • 1 flax egg (1 tbsp ground flax mixed with 2 tbsp warm water, let sit for 5 mins)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • A pinch of salt
  • 1/2 cup walnuts, chopped

Preparation

  1. Sift together flour, baking powder, baking soda, ground nutmeg, cinnamon & salt in a large bowl and set aside

  2. Cream together margarine and sugar

  3. Mix in vanilla, milk, mashed banana and flax egg

  4. Add dry ingredients and bring together (do not over mix)

  5. Fold in walnuts and pour into a greased loaf pan

  6. Sprinkle top of loaf with brown sugar (optional)

  7. Bake in a pre-heated oven at 350 degrees F for about 1 hour & 10 mins
