Mini Banana Bread Studded with Raspberries
Ingredients
- 3/4 cup of plant based milk
- 1 tsp of apple cider vinegar
- 1 cup of raspberries or any berries
- 1 tablespoon of flour
- two very ripe bananas
- 3/4 cup of golden sugar or coconut sugar
- ?1/2 cup of melted coconut oil
- ?1 tsp of baking soda
- ?1 tsp of baking powder
- ?1 tsp of vanilla powder
- ?A pinch of salt
- buttermilk
- 1 1/2 cup of flour
- 1/4 cup dairyfree white chocolate
Preparation
Preheat oven to 350F
Cup of plant based milk with 1 tsp of apple cider vinegar. Set aside
Cup of raspberries or any berries with 1 tablespoon of flour. Lightly mix. Set aside
In a bowl
Mash two very ripe bananas with a hand blender
Add
Cup of golden sugar or coconut sugar
Cup of melted coconut oil
Tsp of baking soda
Tsp of baking powder
Tsp of vanilla powder
A pinch of salt
Add the buttermilk (plant based milk and apple cider vinegar made earlier in the recipe) and mix well
Fold in 1 1/2 cup of flour and mix until just mixed or else the loaf will be too dense. Or two cups of spelt flour
Fold in berries. Chop 1/4 cup dairyfree white chocolate
Spoon or drop into a greased loaf pan. Bake for 50 minutes or until cooked in the middle
