Mini Banana Bread Studded with Raspberries

Ingredients

  • 3/4 cup of plant based milk
  • 1 tsp of apple cider vinegar
  • 1 cup of raspberries or any berries
  • 1 tablespoon of flour
  • two very ripe bananas
  • 3/4 cup of golden sugar or coconut sugar
  • ?1/2 cup of melted coconut oil
  • ?1 tsp of baking soda
  • ?1 tsp of baking powder
  • ?1 tsp of vanilla powder
  • ?A pinch of salt
  • buttermilk
  • 1 1/2 cup of flour
  • 1/4 cup dairyfree white chocolate

Preparation

  1. Preheat oven to 350F

  2. Cup of plant based milk with 1 tsp of apple cider vinegar. Set aside

  3. Cup of raspberries or any berries with 1 tablespoon of flour. Lightly mix. Set aside

  4. In a bowl

  5. Mash two very ripe bananas with a hand blender

  6. Add

  7. Cup of golden sugar or coconut sugar

  8. Cup of melted coconut oil

  9. Tsp of baking soda

  10. Tsp of baking powder

  11. Tsp of vanilla powder

  12. A pinch of salt

  13. Add the buttermilk (plant based milk and apple cider vinegar made earlier in the recipe) and mix well

  14. Fold in 1 1/2 cup of flour and mix until just mixed or else the loaf will be too dense. Or two cups of spelt flour

  15. Fold in berries. Chop 1/4 cup dairyfree white chocolate

  16. Spoon or drop into a greased loaf pan. Bake for 50 minutes or until cooked in the middle
