Mash with a Fork If Needed

Ingredients

  • 1 cup of raspberries, dusted with flour and set aside.
  • 1 cup and 1/2 of flour.
  • 1 tsp of vanilla powder.
  • 2 tablespoons of lemon juice.
  • 1/2 cup of plant based milk with 2 tsp of apple cider vinegar. leave aside.
  • 2 very ripe bananas. you need them to be very soft.
  • 3/4 cup of coconut sugar, or any sugar
  • 1/2 cup of coconut oil, melted.
  • 1 1/2 tsp of baking soda.

Preparation

  1. Preheat the oven to 350F

  2. Grease a loaf pan

  3. Mix dry ingredients together really well

  4. Mix wet ingredients together

  5. Add wet to dry and mix well

  6. Fold in your raspberries

  7. Bake for 1 hour or until centre is cooked

  8. Raspberry chia jam

  9. Place 1 cup of raspberries in a pot on a stove

  10. Warm to low -medium heat

  11. Let it simmer for 10 minutes or until soft

  12. Remove from heat and let it cool

  13. Add 1 T of chia seeds and let it thicken.

  14. Chocolate ganache

  15. Can of coconut cream/milk, chilled

  16. Scoop out of the cream and place into a bowl

  17. Add 1 -2 cup of icing sugar (to taste)

  18. Add 1/2 cup of cacao powder

  19. Using a mixer with paddle attachments, blend your ingredients until thick, creamy and rich

  20. To assemble, dollop and smear a layer of raspberry chia jam on top of your banana bread and spread evenly

  21. Spread another smaller dollop of chocolate ganache on top

  22. Spread on some berries and flowers and quinoa puffs.

  23. Enjoy
