Easy Vegan Raspberry Cake
Ingredients
- 3 cups flour
- 2.5 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 cup melted coconut oil
- 1 cup milk with 2 teaspoons vinegar and 2 tablespoons lemon juice
- 1.5 cups sugar
- A dash of pink salt
- 1 teaspoon vanilla powder
- 1 cup lightly dusted raspberries or blueberries
Preparation
Preheat oven to 350°F and grease and line three 8 or 9-inch cake rounds.
Sift all dry ingredients together.
Add all wet ingredients together.
Fold wet ingredients into dry and mix gently.
Fold in berries.
Divide batter into prepared pans.
Bake for 30 to 45 minutes, checking to avoid drying out.
