Perfect Protein-Packed Pumpkin Bars
Ingredients
- 2 cups chickpeas, cooked
- 1 1/2 cup chickpea flour
- 1/2 cup apple sauce
- 1 can pumpkin purée
- 1/2 cup maple syrup
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp pumpkin spice seasoning
- 1 tbsp vanilla extract
- 1/2 cup dark chocolate chips
Preparation
Add chickpeas, apple sauce, pumpkin purée, vanilla extract and maple syrup into the food processor and mix well for about 5 minutes straight.
Add chickpea flour, pumpkin spice seasoning, baking soda and baking powder to the food processor and mix for another 5 minutes to assure smooth texture.
Spray baking tray with non-stick spray or rub it with light canola oil. When mixture is ready, pour into baking tray and sprinkle chocolate chips evenly on top. You can also mix them into the batter before pouring.
Bake at 375 F for 50 minutes. The finished product should not look exactly like bread and may appear somewhat uncooked. Let cool for an hour and then chill for 2-3 hours before serving.
