Chocolate Chip Zucchini Banana Bread

Ingredients

  • 1 cup grated and packed (water strained) zucchini
  • 1/4 cup sunflower butter
  • 1/2 cup almond milk
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 1/2 cup chickpea flour*
  • 1/3 cup cassava flour*
  • 2 tbsp hemp seeds
  • 1 tsp baking powder
  • handful dark chocolate chips
  • pinch of sea salt

Preparation

  1. Cup oat flour and 1/4 cup coconut instead of the chickpea and cassava

  2. Haven’t tried almond or any other

  3. Mash bananas in a large bowl

  4. Add zucchini and other wet ingredients and mix well

  5. Stir in flours, hemp seeds, baking powder and chocolate chips and mix until thick creamy dough forms

  6. Pour into a oiled bread pan, sprinkle with sea salt and bake at 375 for 40 minutes
