Chocolate Chip Zucchini Banana Bread
Ingredients
- 2 very ripe bananas
- 1 cup grated and packed (water strained) zucchini
- 1/4 cup sunflower butter
- 1/2 cup almond milk
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 1/2 cup chickpea flour
- 1/3 cup cassava flour
- 2 tbsp hemp seeds
- 1 tsp baking powder
- handful dark chocolate chips
- pinch of sea salt
Preparation
Mash bananas in a large bowl
Add zucchini and other wet ingredients and mix well
Stir in flours, hemp seeds, baking powder and chocolate chips and mix until thick creamy dough forms
Pour into a oiled bread pan, sprinkle with sea salt and bake at 375 for 40 minutes
Swaps: 1 2/3 cup oat flour and 1/4 cup coconut instead of the chickpea and cassava. Haven’t tried almond or any other
