Zucchini Chocolate Chip Banana Bread

Ingredients

  • 2 flax eggs
  • 1/4 cup unsweetened apple sauce
  • (can swap with coconut oil)
  • 4 tbsp maple syrup
  • 1 mashed ripe banana
  • 1 zucchini, grated
  • 1/2 cup almond flour
  • 1/2 cup cassava flour
  • 2 tbsp arrowroot flour
  • 3 tbsp extra dark chocolate chips
  • Dash of Cinnamon
  • 1 tsp Vanilla
  • 1/2 tsp Baking soda
  • 1 tsp Baking powder
  • Sprinkle of Sea salt

Preparation

  1. Mix the wet ingredients in a large bowl

  2. Add the dry and stir until thick creamy dough forms

  3. Pour into a lightly oiled bread pan, sprinkle with sea salt and bake at 350 for 30-35 minutes

  4. If it’s still gooey or “uncooked,” that’s OKAY! It will form and cook through after setting and cooling

  5. Plus I like that slightly undercooked texture
