Zucchini Chocolate Chip Banana Bread
Ingredients
- 2 flax eggs
- 1/4 cup unsweetened apple sauce
- (can swap with coconut oil)
- 4 tbsp maple syrup
- 1 mashed ripe banana
- 1 zucchini, grated
- 1/2 cup almond flour
- 1/2 cup cassava flour
- 2 tbsp arrowroot flour
- 3 tbsp extra dark chocolate chips
- Dash of Cinnamon
- 1 tsp Vanilla
- 1/2 tsp Baking soda
- 1 tsp Baking powder
- Sprinkle of Sea salt
Preparation
Mix the wet ingredients in a large bowl
Add the dry and stir until thick creamy dough forms
Pour into a lightly oiled bread pan, sprinkle with sea salt and bake at 350 for 30-35 minutes
If it’s still gooey or “uncooked,” that’s OKAY! It will form and cook through after setting and cooling
Plus I like that slightly undercooked texture
