Fluffy Healthier Banana Bread Brownies

Ingredients

  • 300g mashed, ripe banana
  • 1 tsp apple cider vinegar
  • 200 ml plant milk
  • 1 tbsp nut butter (I used sunflower seed)
  • 300g flour (150g whole grain rice flour, 150g oat flour*)
  • 50g cacao powder
  • 50g ground nuts (almonds or hazelnuts)
  • 50g coconut sugar (or more if you like it sweeter)
  • 1 pinch of salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • Optional: dark chocolate, date syrup

Preparation

  1. Mix all ingredients well.

  2. If desired, top with dark chocolate and date syrup.

  3. Bake in a greased or baking sheet-lined form for about 40 minutes in a preheated oven at 180°C or 356°F.

Tips

  1. For a gluten-free version, use buckwheat flour or more rice flour instead of oat flour.
