Vegan Chocolate Banana Bread Delight

Ingredients

  • ~220 g banana (mashed, very ripe)
  • 1 tsp apple cider vinegar
  • 35 g nut butter
  • 300 ml soy milk (or other)
  • 100 g erythritol (or other sweetener)
  • 1 pinch of salt
  • 200 g flour (I used 100 g quinoa and 100 g spelt)
  • 1/3 tsp baking soda
  • 2 tsp baking powder (9g)
  • 50 g cacao powder
  • 30 g chopped, dark chocolate
  • optional: flavedrops

Toppings

  • 1 ripe banana
  • a small handful of nuts
  • melted dark chocolate

Preparation

  1. Mix all ingredients to a dough.

  2. Preheat the oven to 180°C/365°F (upper and lower heat).

  3. Pour it into a box shape (oiled or prepared with baking paper).

  4. Decorate with the banana (sliced in the middle) and nuts.

  5. Bake for ~ 60-90 min (depending on your oven and the baking form you're using).

  6. Eat as such or with chocolate/nut cream.

Notes

  1. You can use different gluten-free flours like rice flour or a gf flour mix. Normal wheat flour, oat flour etc. work as well. The consistency might vary.
