Flour-Free Vegan Banana Bread for Breakfast
Ingredients
- 3 Medium Ripe Bananas
- 2 1/2 cup Rolled Oats
- 1/2 cup Coconut Sugar
- 1/4 cup Nut or Seed Butter
- 2 tbsp Ground Flax OR Ground Chia Seeds + 6 tbsp Water
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tsp Apple Cider Vinegar
- 1 tsp Vanilla Extract (Optional)
- 1/2 tsp Salt
Preparation
Preheat your oven to 125C and begin by preparing your chia or flax egg by mixing your seeds with 6 tablespoons of water; let this sit for a few minutes.
Begin blending or pulsing your oats until it forms into a fine flour.
Place your oat flour in a medium sized bowl and add your baking powder, baking soda, remaining 1/2 cup of rolled oats, and salt; mix well.
In a separate bowl, begin to mash your ripe bananas well until a runny, egg-like texture.
Once all mashed and mushy, add your nut butter, coconut sugar, apple cider vinegar, vanilla extract, and chia or flax egg; mix well.
Slowly begin to incorporate your dry mixture into your banana mixture and continue to stir until all clumps have dissolved.
Pour your batter into a greased medium loaf pan and pop into the oven; allow this to bake for 60-70 minutes.
Let it cool for 10 minutes before you slice this beauty up and enjoy under the sunshine.
