Vegan Gluten-Free Banana Bread

Ingredients

  • 250g gluten free self raising flour
  • 250g apple purée
  • 100g maple syrup
  • 3 large over ripe bananas mashed
  • 60ml any non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp mixed spice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 2 tsp lemon juice
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 50g crushed walnuts (optional)
  • 50g dark chocolate chips (optional)

Preparation

  1. Mix milk and cider vinegar and leave to curdle

  2. Put all other ingredients in a large bowl and mix until smooth

  3. Add milk mixture to the bowl and stir

  4. Line a loaf tin with baking paper and pour in mixture

  5. Oven bake on 180 degrees for 30 minutes or until golden and a skewer prod comes out clean
