Vegan Gluten-Free Banana Bread

Ingredients

  • 2 cups gf oat flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 1/2 cups of mashed ripe banana
  • 1/2 cup soy yoghurt
  • 1/2 cup maple syrup
  • 1/3 cup soy milk
  • 2 tsp vanilla extract
  • 1/2 cup dark chocolate chips

Preparation

  1. Preheat oven to 180c. Grease a 9x5 loaf pan, or line with parchment.

  2. Combine dry ingredients in a mixing bowl. Whisk liquid ingredients in separate bowl.

  3. Pour the wet ingredients into the dry, and stir to form a batter.

  4. Smooth the batter into the prepared pan. Press chocolate chips into the top of the batter.

  5. Bake for 45-48 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let it cool completely.
