Vegan Gluten-Free Banana Bread
Ingredients
- 2 cups gf oat flour
- 1 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 1/2 cups of mashed ripe banana
- 1/2 cup soy yoghurt
- 1/2 cup maple syrup
- 1/3 cup soy milk
- 2 tsp vanilla extract
- 1/2 cup dark chocolate chips
Preparation
Preheat oven to 180c. Grease a 9x5 loaf pan, or line with parchment.
Combine dry ingredients in a mixing bowl. Whisk liquid ingredients in separate bowl.
Pour the wet ingredients into the dry, and stir to form a batter.
Smooth the batter into the prepared pan. Press chocolate chips into the top of the batter.
Bake for 45-48 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let it cool completely.
