Vegan Banana Rye Bread

Ingredients

  • 1/2 cup coconut flour
  • 1 1/2 cup rye flour
  • 5-6 medjool dates finely chopped
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 3 flax eggs
  • 3 bananas small, roughly mashed * 5 tablespoons coconut oil melted * 2-3 tablespoons maple syrup or date syrup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat your oven to 180C, and line a loaf tin with parchment paper

  2. In a medium bowl, mix all of your dry ingredients together, such as your flours, dates, cinnamon, baking powder and salt

  3. In a separate bowl combine your prepared flax eggs with your other wet ingredients

  4. Once mixed well, slowly add your wet ingredients into your dry ingredients, and combine whilst doing so

  5. Mix well, and pour your dough into your lined tin

  6. If you have any leftover banana, add your slices on top as a fun decoration! Finally, bake in the oven for 50 minutes, and leave to cool

  7. Enjoy
