Toasted Coconut Banana Bread

Ingredients

  • 1/4 cup liquid coconut oil
  • 2 tbsp maple syrup
  • 1/2 tbsp apple cider vinegar
  • 2 tbsp flax meal
  • 1 1/4 cup oat flour
  • 1/2 cup cassava flour
  • 1/4 cup unsweetened raisins
  • 1/4 cup raw pumpkin seeds
  • 1/2 tsp baking soda
  • Sprinkled coconut for topping

Preparation

  1. Preheat oven to 350 degrees. In a large bowl, add mashed banana, coconut oil, maple syrup and vinegar

  2. Mix well until creamy. Add flax meal, flours and stir until dry ingredients are fully absorbed

  3. Mix in raisins, pumpkin seeds and baking soda. Batter should be thick and sticky

  4. Pour into an oiled bread pan and spread evenly . Sprinkle coconut chips and bake for 35 minutes
