Vegan Banana Bread Blondies

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 6 Tbsp peanut butter
  • 1/4 cup plant milk
  • 1 1/2 cups spelt flour
  • a pinch of salt
  • 1 Tbsp baking powder
  • 1/4 cup chocolate chips

Preparation

  1. Preheat oven to 175°C (350°F)

  2. In a bowl, mix the mashed bananas, maple syrup, peanut butter, and plant milk until well combined

  3. In another bowl, mix the spelt flour, salt, and baking powder

  4. Combine the wet and dry ingredients, stirring until just mixed

  5. Fold in the chocolate chips

  6. Pour the batter into a greased baking pan

  7. Bake at 175°C for 20-25 minutes
