Healthy Vegan Gluten-Free Banana Cupcakes

Ingredients

  • 250g gluten free self raising flour
  • 250g apple purée
  • 100g maple syrup
  • 3 large over ripe bananas mashed
  • 60ml any non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp mixed spice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 2 tsp lemon juice
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 50g crushed walnuts (optional)
  • 50g dark chocolate chips (optional)

Preparation

  1. Mix milk and cider vinegar and leave to curdle

  2. Put all other ingredients in a large bowl and mix until smooth

  3. Add milk mixture to the bowl and stir

  4. Pour mixture into cupcake cases

  5. Oven bake on 180 degrees for 15 minutes or until golden and a skewer prod comes out clean

Topping

  1. To make the topping, simply mix together dairy free cream cheese or thick coconut yoghurt with maple syrup, a pinch of cinnamon and mashed banana until creamy and smooth
