Vegan Banana Nut Bread

Ingredients

  • 3 bananas (+ 1 for topping)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup almond milk
  • 2 tsp vanilla extract
  • 2 cups gluten-free flour
  • 1 tsp cinnamon
  • 1/4 tsp fresh ground nutmeg
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup toasted chopped walnuts

Preparation

  1. Preheat the oven to 350 degrees F (about 175 degrees C).

  2. In a medium size bowl, mash the bananas with a fork until smooth, leaving some chunks for texture.

  3. Add oil, flour, spices, almond milk, vanilla, and salt to the mixture and mix.

  4. Add the baking soda and chopped toasted walnuts.

  5. Do not overmix to prevent the bread from becoming tough and to keep it fluffy.

  6. Pour the banana bread batter into a prepared pan coated with vegan butter and flour, and top with sliced bananas and any leftover chopped walnuts.

  7. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.

  8. Let the bread cool a little bit.
