Whole Wheat Banana Bread

Ingredients

  • 1.5 cups whole wheat flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 eggs
  • 3 mashed bananas
  • 1/4 cup almond milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • Chopped walnuts (optional)

Preparation

  1. Preheat oven to 350ºF

  2. Mix the honey and melted coconut in a large mixing bowl

  3. Add in eggs and mix again

  4. Then mash the bananas and add into the bowl (I like to mash my bananas but not completely, that way there are moist little banana chunks throughout the bread)

  5. Add in milk and vanilla extract and mix again

  6. Then add in the rest of the ingredients and gently stir until well combined

  7. Top with chopped walnuts or any toppings you like

  8. Pour the batter in a loaf pan lined with parchment paper and bake for 55-60 minutes

  9. Mine took around 56 minutes

  10. Remove from the oven and allow to cool before slicing and enjoy
