Peanut Butter and Tiger Nut Banana Bread

Ingredients

  • 4 ripe bananas mashed (about 1 cup)
  • 2 eggs (or chia eggs)
  • 1/4 cup date syrup
  • 1/3 cup peanut butter
  • 1 tsp vanilla extract
  • 1 3/4 cup tiger nut flour (you can use almond flour as a substitute)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp bicarbonate of soda

Preparation

  1. Preheat oven to 180C and line a greased baking tin with parchment paper. Add the eggs, date syrup, peanut butter and vanilla extract to the bowl of an electric mixer and mix well. Add the bananas and continue to mix

  2. Add the dry ingredients to a separate bowl whisk to combine. Add to the wet ingredients. Don’t overmix

  3. Pour the batter into the baking tin and bake for about 1 hour until golden
