Homemade Coconut Loaf Tea Time Treat

Ingredients

  • 1/4 cup melted coconut oil
  • 1 1/2 cups desiccated coconut
  • 3/4 cup coconut sugar
  • 3/4 cup wholemeal flour
  • 1 cup spelt flour
  • 1/2 tsp nutmeg
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup coconut milk
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 180C and line a loaf tin.

  2. Spread the shredded coconut on a baking tray and toast until slightly golden, about 3 minutes.

  3. In a large mixing bowl, combine the toasted coconut and the sugar.

  4. Sift in the flours, nutmeg, baking powder, baking soda, and salt, then whisk to combine.

  5. In another bowl, whisk the eggs together.

  6. Add the coconut milk, coconut oil, and vanilla to the eggs.

  7. Gently fold the dry ingredients into the wet ingredients, ensuring not to overmix.

  8. Pour the mixture into the loaf tin and bake for 45 to 50 minutes until a toothpick inserted comes out clean.
