Healthy Spelt Flour Waffles with Fruit Topping
Ingredients
- 2 tbsp flax
- 1/4 cup water
- 2 1/4 cup coconut milk
- 1 tbsp apple cider vinegar
- 2 1/4 cup spelt flour
- 1 tbsp baking powder
- pinch of salt
- 1/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 1 tsp vanilla
Preparation
Method
Mix water and flax and let it sit for 5 minutes to thicken. This creates a flax egg.
Mix apple cider vinegar with milk and whisk. This creates a buttermilk. Set aside.
Combine flour, salt, baking powder and coconut sugar in a large bowl.
Mix in the coconut oil, vanilla, milk and flax egg. Stir enough to mix the dry ingredients with the wet but clumps are ok! Don’t want to over mix.
Pour batter into waffle iron and cook for desired time. I did 4 minutes to get them crispy!
Sift icing sugar, place strawberries, blueberries and drizzle maple syrup on top.
Tips
Made with spelt flour for a healthier choice.
For gluten-free option, try oat flour or 1-1 flour as a replacement.
