Almond Flour Chocolate Chip Cookies
Ingredients
Dry
- 2 1/2 cups super-fine almond flour
- 1 tsp baking soda
- 1/2 tsp salt
- chocolate chunks
Wet
- 1/2 cup coconut oil, not fully melted
- 3/4 cup pure cane sugar or coconut sugar
- 2 eggs
- 1 tsp vanilla extract
Preparation
In a medium bowl combine flour, salt and baking soda and whisk.
In another bowl bring together coconut oil and sugar.
Once fully incorporated and frothy add in the eggs and vanilla.
Bring the wet and dry ingredients together and lastly fold in the chocolate chips.
Line baking sheet with parchment paper and lay out cookie balls using a small cookie scooper.
Let dough sit in the refrigerator for 30 minutes to an hour before popping into the oven.
Preheat oven to 350 degrees.
Remove cookies from fridge and bake for about 10 minutes.
Let cool completely before removing from pan.
