Chocolate Chip Banana Bread

Ingredients

  • 3 small extra ripe bananas (mashed)
  • 2 large eggs
  • 2 cups almond flour
  • 1/4 cup tapioca flour
  • 1/3 cup mini chocolate chips
  • 3 tbsp coconut sugar
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt

Topping

  • 1/4 cup chocolate chunks
  • A handful of chocolate chips

Preparation

  1. Preheat oven to 350 ºF.

  2. Line an 8×4” loaf pan with baking paper.

  3. Whisk your wet ingredients in a large bowl before sifting in the dry ingredients.

  4. Stir the mixture until you get a silky smooth batter.

  5. Fold in the chocolate chips.

  6. Pour the batter into the loaf pan and then add more chocolate chips and chocolate chunks.

  7. Bake the bread for 20 mins (uncovered).

  8. Then cover the pan with a foil to prevent the bread from turning too brown.

  9. Bake it for 15-20 more mins.

  10. Let the bread cool before you serve it.
