dang chocolate chip cookie

Ingredients

  • 1.5 cups gluten free 1:1 baking flour (cup4cup, king arthur 1:1, or bobs red mill baking 1:1)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup softened (not melted) coconut oil
  • 1/2 cup coconut sugar
  • 1/3 cup maple syrup
  • 3/4 cup chocolate chips

Preparation

  1. in a small bowl, mix together 1.5 cups gluten free 1:1 baking flour (cup4cup, king arthur 1:1, or bobs red mill baking 1:1) with 1/2 tsp baking soda, 1/4 tsp salt. set aside.

  2. in large bowl, cream 1/3 cup softened (not melted) coconut oil with 1/2 cup coconut sugar, then stir in 1/3 cup maple syrup

  3. add dry ingredients to wet and stir to combine, it may seem dry but keep going.

  4. add in 3/4 cup chocolate chips

  5. form into patty-shaped cookies and place on parchment lined baking sheet

  6. bake at 350 for 15-17 minutes or until golden brown.
