dang chocolate chip cookie
Ingredients
- 1.5 cups gluten free 1:1 baking flour (cup4cup, king arthur 1:1, or bobs red mill baking 1:1)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup softened (not melted) coconut oil
- 1/2 cup coconut sugar
- 1/3 cup maple syrup
- 3/4 cup chocolate chips
Preparation
in a small bowl, mix together 1.5 cups gluten free 1:1 baking flour (cup4cup, king arthur 1:1, or bobs red mill baking 1:1) with 1/2 tsp baking soda, 1/4 tsp salt. set aside.
in large bowl, cream 1/3 cup softened (not melted) coconut oil with 1/2 cup coconut sugar, then stir in 1/3 cup maple syrup
add dry ingredients to wet and stir to combine, it may seem dry but keep going.
add in 3/4 cup chocolate chips
form into patty-shaped cookies and place on parchment lined baking sheet
bake at 350 for 15-17 minutes or until golden brown.
