Fluffy Honey Almond Flour Cookies

Ingredients

  • 2 cups almond flour
  • 3 tbsp coconut flour
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1.5 tsp baking powder

Frosting

  • 2/3 cup vegan cream cheese (or regular)
  • 1/3 cup coconut cream
  • 1/4 cup powdered sugar
  • 1-2 tsp beet root powder (optional, for coloring)

Preparation

  1. Whisk together wet ingredients.

  2. In a separate bowl, mix dry ingredients.

  3. Add dry ingredients to wet, mix until smooth.

  4. Refrigerate batter for 20 minutes.

  5. Preheat oven to 350 degrees F.

  6. Line a baking sheet with parchment paper.

  7. Form dough into 16 balls, press down so the cookies are about 3/4 inch thick. Shape into a heart, if desired.

  8. Bake for 12-14 minutes.

  9. Let cool.

  10. Prepare the frosting by mixing all frosting ingredients until smooth.

  11. Spread frosting over the top.

  12. Enjoy immediately or refrigerate for frosting to harden a little.

  13. Store in an airtight container in the fridge.
