Fluffy Honey Almond Flour Cookies
Ingredients
- 2 cups almond flour
- 3 tbsp coconut flour
- 1/3 cup honey
- 1/4 cup coconut oil
- 2 eggs
- 2 tsp vanilla extract
- 1.5 tsp baking powder
Frosting
- 2/3 cup vegan cream cheese (or regular)
- 1/3 cup coconut cream
- 1/4 cup powdered sugar
- 1-2 tsp beet root powder (optional, for coloring)
Preparation
Whisk together wet ingredients.
In a separate bowl, mix dry ingredients.
Add dry ingredients to wet, mix until smooth.
Refrigerate batter for 20 minutes.
Preheat oven to 350 degrees F.
Line a baking sheet with parchment paper.
Form dough into 16 balls, press down so the cookies are about 3/4 inch thick. Shape into a heart, if desired.
Bake for 12-14 minutes.
Let cool.
Prepare the frosting by mixing all frosting ingredients until smooth.
Spread frosting over the top.
Enjoy immediately or refrigerate for frosting to harden a little.
Store in an airtight container in the fridge.
