Maple White Chocolate Macadamia Cookies

Ingredients

  • 2 cups gluten-free flour
  • 3/4 cup maple sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1/4 cup nut milk
  • 1/2 teaspoon vanilla extract
  • about 1/2 cup macadamia nuts
  • white chocolate (e.g., Zimt brand)

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. Combine all ingredients except chocolate, including chopped macadamia nuts (about 1/2 cup)

  3. Scoop dough onto a nonstick baking sheet, spaced out; this will make about 9 cookies

  4. Bake for 10-12 minutes or until lightly browned

  5. Add chopped white chocolate and let cool
