Spiced Ginger Almond and Oat Cookies

Ingredients

  • 1/2 cup almond flour
  • 3/4 cup rolled GF oats
  • 3 Tbs sunflower seeds
  • 2 Tbs ground flaxseed
  • 2 Tbs sesame seeds
  • 1/2 cup desiccated coconut
  • 1 tsp ground allspice
  • 1 tsp cinnamon
  • 3 tsp ground ginger
  • 1 tsp baking powder
  • 4 Tbs coconut oil
  • 1 ripe banana
  • 4 Tbs maple syrup
  • 2 Tbs almond butter
  • Pinch salt

Preparation

  1. Preheat the oven to 180C and line a baking tray.

  2. Mix the flour, baking powder, oats, seeds, coconut and spices and salt in a bowl.

  3. Add the melted coconut oil, banana, maple syrup and almond butter and mix to combine.

  4. Shape into balls using a heaped tablespoon and flatten slightly.

  5. Bake for 15 minutes until just slightly brown.

  6. Transfer to a wire rack and allow to cool.
