Spiced Ginger Almond and Oat Cookies
Ingredients
- 1/2 cup almond flour
- 3/4 cup rolled GF oats
- 3 Tbs sunflower seeds
- 2 Tbs ground flaxseed
- 2 Tbs sesame seeds
- 1/2 cup desiccated coconut
- 1 tsp ground allspice
- 1 tsp cinnamon
- 3 tsp ground ginger
- 1 tsp baking powder
- 4 Tbs coconut oil
- 1 ripe banana
- 4 Tbs maple syrup
- 2 Tbs almond butter
- Pinch salt
Preparation
Preheat the oven to 180C and line a baking tray.
Mix the flour, baking powder, oats, seeds, coconut and spices and salt in a bowl.
Add the melted coconut oil, banana, maple syrup and almond butter and mix to combine.
Shape into balls using a heaped tablespoon and flatten slightly.
Bake for 15 minutes until just slightly brown.
Transfer to a wire rack and allow to cool.
