Delicious Snickerdoodle Cookies with Protein
Ingredients
- 1/4 cup almond flour

- 1/2 cup cashew butter
- 1/3 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
Preparation
Mix together cashew butter, maple syrup, and vanilla extract. In a separate bowl, combine almond flour, protein powder, cinnamon and baking soda. Add dry ingredients to wet and mix until smooth.
Refrigerate batter for 20-30 minutes, or until firm enough to roll into balls. Preheat oven to 350 degrees and line baking sheet with parchment paper or silicone baking mat.
Roll into 15 balls. Coat each one in cinnamon sugar mixture and push down to flatten.
Bake for 7-9 minutes. Let cool and enjoy!
