Giant Gluten-Free Oat and Banana Cookie

Ingredients

  • 1 cup gluten free rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup almond flour
  • 1/4 cup almond butter
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup frozen wild blueberries

Preparation

  1. Split the batter in half to make two large cookies.

  2. Use a baking sheet lined with parchment paper or a cast iron pan.

  3. Bake at 350°F for 15-20 minutes.
