Gluten-Free Blueberry Crumble Mug Cake

Ingredients

  • 1 cup gluten free rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup almond flour
  • 1/4 cup almond butter
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup frozen wild blueberries

Crumble topping

  • 1 tbsp almond flour
  • 1 tbsp coconut sugar
  • 1 tbsp almond butter

Preparation

  1. Mix all the main ingredients together in a mug or oven-safe dish

  2. Preheat oven to 350°F.

  3. Bake for about 20 minutes or until a toothpick comes out clean.

  4. Mix the crumble ingredients in a small bowl

  5. Top the baked cake with the crumble mixture.
