Cherry Almond Crumble Bars

Ingredients

  • 2 cups pitted cherries
  • 2 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 cup almond flour
  • 1 cup oat flour
  • 1/3 cup unsweetened applesauce
  • 6 tablespoons coconut sugar

Preparation

  1. Bring 2 cups of pitted cherries and 2 tablespoons of maple syrup to a boil for about 10 minutes.

  2. Lower the heat and let it simmer until the mixture thickens.

  3. Add 2 tablespoons of chia seeds and let it sit for 5-10 minutes on low heat.

  4. Mix together 1 cup of almond flour, 1 cup of oat flour, 1/3 cup of unsweetened applesauce, and 6 tablespoons of coconut sugar until a sticky dough forms.

  5. Place about two-thirds of the dough in an 8x8 inch pan and flatten to make the crust.

  6. Spread the cherry mixture on top and sprinkle the remaining dough bits onto it.

  7. Bake at 350 degrees Fahrenheit for 35 minutes.

  8. Enjoy the bars, which are dairy-free and gluten-free with fruity sweetness.
