Easy Gluten-Free Almond Oat Pancakes

Ingredients

  • 3/4 cup oat flour
  • 1/4 cup almond flour
  • 1 tbsp coconut sugar or any sugar
  • 1/2 cup plant based milk

Preparation

  1. Combine the oat flour, almond flour, and coconut sugar, then gradually add plant-based milk while stirring to achieve a thick but pourable consistency.

  2. Heat a non-stick pan over medium heat without adding oil, or use oil with a normal pan.

  3. Use about a 1/8 cup measure to scoop the batter onto the heated pan, cook on the first side until the top has a matte finish with a few bubbles, then flip and cook for 2 more minutes.

  4. Once all pancakes are cooked, top with desired toppings such as chocolate chips, whipped cream, peanut butter, bananas, or tropical fruit.
