Chunky Banana Chocolate Chip Muffins

Ingredients

  • 2 large bananas
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water)
  • 1.5 cups almond flour
  • 2 dashes cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon Himalayan salt
  • 1/2 cup almond butter
  • 1/2 cup chocolate chunks (or more)

Preparation

  1. Preheat oven to 350°F and line cupcake pan with liners.

  2. Make flax egg and let it sit for 10 minutes.

  3. Mash bananas and leave slightly chunky.

  4. Add all dry ingredients.

  5. Mix in flax egg and almond butter until combined to get a thick batter.

  6. Fold in chocolate chips.

  7. Bake for approximately 18-20 minutes.
