Peanut Butter Stuffed Banana Muffins
Ingredients
- 1/4 cup Oat Flour
- 1/4 cup Buckwheat Flour
- 1/4 cup Protein Powder
- 2 small Bananas (mashed)
- 2 tsp Peanut Butter
- Extra Peanut Butter for the centres
- 1/4 cup almond milk
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of Pink Salt (optional)
Preparation
Preheat oven to 180°C
In a bowl combine mashed banana and peanut butter
Add in flours, protein powder, baking powder and soda, cinnamon and salt and stir until combined
Add almond milk until a thick and smooth mix is achieved
Pour half of the mixture into lined or non stick muffin pans. Place a dollop of thick peanut butter in the centre. Add remaining mixture on top
Place in the oven and bake for 20 minutes or until cooked through
Store in the fridge for 3-4 days. I recommend microwaving them for around 10 seconds before eating them
