Ultimate One Bowl Vegan Banana Bread
Ingredients
- 3 bananas
- 1/3 cup coconut oil
- 1/3 cup sugar
- 1 tsp vanilla extract
- 1 1/2 cups wholemeal flour
- 1 tbsp cornflour (optional)
- 2 tsp baking powder
- 1 tbsp cinnamon (optional)
- pinch pink salt (optional)
- dash of almond milk (if needed)
Preparation
Preheat oven to 175°C.
In a large bowl, mash bananas and then mix in coconut oil, sugar, and vanilla.
Add remaining ingredients and stir until combined. Don’t over mix. Add a splash of almond milk if the batter is too thick.
Pour into a lined tray and bake for 50 minutes or until cooked through.
Store in an airtight container in the cupboard for 5 days or in the fridge for a week. This will also freeze well.
