Ultimate One Bowl Vegan Banana Bread

Ingredients

  • 3 bananas
  • 1/3 cup coconut oil
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups wholemeal flour
  • 1 tbsp cornflour (optional)
  • 2 tsp baking powder
  • 1 tbsp cinnamon (optional)
  • pinch pink salt (optional)
  • dash of almond milk (if needed)

Preparation

  1. Preheat oven to 175°C.

  2. In a large bowl, mash bananas and then mix in coconut oil, sugar, and vanilla.

  3. Add remaining ingredients and stir until combined. Don’t over mix. Add a splash of almond milk if the batter is too thick.

  4. Pour into a lined tray and bake for 50 minutes or until cooked through.

  5. Store in an airtight container in the cupboard for 5 days or in the fridge for a week. This will also freeze well.
